Pouilly-Fuissé Cuvée Tradition 2017

Vine location: village of Vergisson.
Type of soil: Jurassic clay and limestone, stony.
Exposure: 8 plots spreading over the village, due south, west, east.
Grape variety: 100% Chardonnay.
Vine age: 50 years old on average.
Training system: small arcure ( bending of canes), 6 to 8 buds. Natural fertilizing, soil ploughing, yield control. Our vine-growing approach obeys 2 principles :
– an environmentally-concerned agriculture.
– a rational pest control.
Harvest: hand-picking, slight crushing, pneumatic press, static settling.
Winemaking: the fermentation is achieved in thermoregulated vats at around 18° C.
Characteristics: light pale yellow colour ( white flower with exotic undertones). Mineral finishing aromas. In spite of its structure, it lingers with finesse and elegance.
Cellar storing: 4 to 6 years depending on the strength of the vintage.
Food and wine match: perfectly well-suited with steamed saltwater fish and freshwater fish cooked in butter sauce ; chicken roasted in lemon juice. Yet, you can also appreciate it on its own as an apéritif. Best when served between 12 and 13° C.
