The white gold of Burgundy
An outstanding cuvée with green and gold tints, and fine, floral
aromas of white flowers and violets. It opens up widely in the
mouth and finishes on vanilla and spice notes.

Type of soil :
Jurassic clay and chalk soil
of quaternary formation which is stony and filtering.
Exposure
South to South-West with
maximum sunshine on the hillside.
Hand-picking, incoming grapes
processed by gravity, cold static settling and press juice selection.
Gentle pneumatic pressing.
Winemaking :
Alcoholic fermentation achieved
in casks for 15 to 30% of the cuvée's volume, vinification during
11 months in fine grained oak " pièces " (Burgundy traditional barrels)
; external yeasts are NOT added. Malo-lactic fermentation entirely
completed, ageing on fine lees which are regularly stirred.
Characteristics :
The oak ageing allows all
the complexity of fully ripe grapes to stand out and provides the
balancing vanilla undertones while the other part of the cuvée,
being aged in vats, will preserve the fruit aromas. This wine is both
powerful and very delicate

Cellar storing : 6 to 8 years,
but wait a bit to discover it at its best.
Food and wine match :
Should be served between
12 an 14°C. Fish in creamy sauce, foie gras, sea-food gratin, Bresse
poultry, cream sauce and mushrooms.
