This wine has a strong personality and comes from
different plots, with 60 year-old vines which benefit from outstanding
exposure and soil. The bouquet is mineral and the body releases
hints of vanilla. Its golden hue matches quince and acacia honey
aromas.

South, gathering the 3 following
terroirs : " les Charmes ", " Tiller " and the well-known terroir
of " les Crays ".

100 % Chardonnay.
Vine age :
70 years old on average.
Training system :
small arcure ( bending of
canes), 6 to 8 buds. Soil ploughing, natural fertilizing. Our vine-growing
approach obeys 2 principles :
- an environmentally-concerned agriculture.
- a rational pest control.
Harvest :
hand-picking, slight thinning
out, at the winery : incoming grapes processed by gravity, press juice
selection.
Winemaking :
alcoholic fermentation achieved
in casks for 30 to 50 % of the cuvée's volume.External yeasts are
not added. 11 month vinification carried out in fine grained oak "
pièces " ( = Burgundy traditional barrels). Regular stirring of the
lees. After the malo-lactic fermentation, the wine is racked and aged
on lees so as to develop its flesh and structure.
Characteristics :
luminous saffron yellow cuvée
suggesting complex aromas. Strong ripe fruit (pear, apricot). White
flower and honey. Round ,well-balanced structure ; good starting impressions
on the palate. This wine offers both strength and flesh as well as
subtle vanilla undertones.
Cellar storing :
4 to 10 years depending on
the strength of the vintage.
Food and wine match :
should be served between 12
and 14°C. Noble fish (turbot, angler fish), Bresse poultry with cream
and morels, stuffed capon.
