| Training system: | Arcure (bending of canes) ang Guyot, ploughing, natural fertilizing, grape quantity control. | 
| Harvest: | Hand-picking, incoming grapes processed by gravity, cold static settling and press juice selection. Gentle pneumatic pressing. | 
| Winemaking: | Fermentation achieved in thermoregulated stainless steel vats, malo-lactic fermentation entirely completed. | 
| Characteristics: | The vat ageing enables a full expression of fruit freshness and finesse. | 
| Cellar storing: | Should be drunk within 2 or 3 years to enjoy its freshness at its best. Thanks to its structure, you can also lay it down for 4 to 5 years. | 
| Food and wine match: | As an apéritif. Good match with the plainest dishes as well as the most delicate ones : white meat, médaillon, shellfish, fish, fruit pastries. The chef’s tip : cray-fish quenelle in St Véran sauce. |
