Vine location: village of Prissé : F 71960.
Type of soil: Jurassic clay and chalk soil of quaternary formation.
Exposure: South to South-West with maximum sunshine on the hillside.
Grape variety: 100% Chardonnay.
Vine age: The average is 40 years old.
Training system: Arcure (bending of canes) ang Guyot, ploughing, natural fertilizing, grape quantity control.
Harvest: Hand-picking, incoming grapes processed by gravity, cold static settling and press juice selection. Gentle pneumatic pressing.
Winemaking: Fermentation achieved in thermoregulated stainless steel vats, malo-lactic fermentation entirely completed.
Characteristics: The vat ageing enables a full expression of fruit freshness and finesse.
Cellar storing: Should be drunk within 2 or 3 years to enjoy its freshness at its best. Thanks to its structure, you can also lay it down for 4 to 5 years.
Food and wine match: As an apéritif. Good match with the plainest dishes as well as the most delicate ones : white meat, médaillon, shellfish, fish, fruit pastries. The chef’s tip : cray-fish quenelle in St Véran sauce.
